Lamb and Dang Gui Soup

Ingredients:

   Lamb (preferably leg with bone), half kilo
   Dang Gui, 60 grams
   Astragalus (Huang Qi), 30 grams
   Fresh Ginger, 5 slices, plus 5 more slices
   Salt to taste

Directions:

1. Add the lamb briefly to boiling water with 5 slices of Ginger, bring to boil, then drain and rinse
2. Add the lamb to the pot with the other ingredients, add 8 cups of Water, bring to boil and simmer, covered, for 2 hours. Add salt to taste.

Variations:

1. Mutton is usually used in China
2. Chinese Red Dates (Da Zao) and Goji berries can be added to sweeten a little
3. Severe deficiency, double the quantity of Astragalus Huang Qi and add Codonopsis Dang Shen

Indications:

This is very nourishing and restorative, increases Blood and nourishes Qi. Good for debility, Blood weakness, Postpartum weakness, Amenorrhea and Dysmenorrhea associated with Blood deficiency. It is also recommended for Spontaneous Sweating and pain over the whole Body.
